Instructions
1) Use a decent sized bowl In general, this usually means the bowl needs to be bigger than you think! When you whisk in a big bowl, the mixture has more room to move around in, and the faster it becomes whipped. Always opt for a large bowl.
2) When whisking eggs, pop egg yolks with the whisk first before whisking This is also obvious, but we’ve seen many people spend a good minute or so beating eggs where the yolks are still yet to break! Do your wrists and arms a favor and just pop those yolks before whisking.
3) When whisking anything but egg whites, whisk using a side to side motion For fast whisking, we recommend you whisk from side to side. The reason why is that the back and forth motion causes more sheer force on the mixture, much more so than moving the whisk in a circular motion, or using the beating motion (see step 4).
When you whisk back and forth, the liquid mixture moves with your whisk to one side, but is then moved in the opposite direction as you move your whisk back. This means the liquid ‘crashes’ into each other, so it whisks up fast. When you whisk in a circular motion, or you beat in a circular motion to one side of the bowl, the liquid is moving in one direction (clockwise if you’re right handed, or anticlockwise if you’re left handed). This exerts far less pressure than when whisking back and forth as the liquid moves in one direction, and therefore takes you longer to whisk up.
4) When whisking egg whites, beat your whisk against the side of the bowl in a circular motion with the bowl tilted towards you (i.e. beating motion) We only recommend using the beating motion with egg whites as egg whites are quite viscous to start off with, the beating motion traps a lot more air into the mixture, so it whisks up into stiff peaks within 4-5 minutes.
It’s the only time we don’t recommend the side to side motion as, with viscous egg whites, it’s faster to trap air using the beating motion than it is to use the sheer force you get from the side to side motion.

Q: Can I use these whisks on any material pan or bowl?

When the wires have flex, they act like a spring when pressed into the side of bowl, which makes them flip out and add an extra whisking motion. This is perfect for when you need to whisk egg whites into stiff peaks. Your mixture is whisked a lot faster than your hand needs to move, reducing tension on wrists, arms and shoulders.
Q: Why do I need two different sizes of whisks?
A: Both whisks will whisk up mixtures extremely well. However, we want to take the ‘work’ out of whisking as much as possible. The large 11” whisk is ideal for whisking large amounts of mixture, as well as mixing smooth liquids, such as egg whites, where a small whisk will take more time. The smaller 8” whisk is ideal for small amounts of mixture in a small bowl, where the large whisk may not have enough room to whisk well, but it’s also invaluable for removing lumps and bubbles in sauces and gravy, which the large whisk may miss.
Q: Why should the wires be different lengths and not uniform?
A: Whisks that have wires that are all one length constrict the movement of any mixtures being whisked due to the wires running in to each other. Q: Are these as durable as stainless steel whisks?
