Tuna Salad with Tomatoes, Olives and Arugula

If you are looking for a filling, but healthy dish, then you can never go wrong with tuna salad. And the best part of it; it only takes as much time as brewing a fresh cup of coffee.
Well, maybe a bit longer, but you get my point yeah?
Your Ingredients:
3 tbsp of extra virgin olive oil
3 tbsp of sherry vinegar
1/4 teaspoon of salt
1/4 teaspoon of freshly ground pepper
4 large tomatoes
1 (but if you want more, then make it 2) 5 ounce can of chunky light tuna in olive oil (with its oil drained)
1/3 cup of chopped celery
1/4 cup of finely chopped red onion
1/4 cup of chopped olives
1 teaspoon dried thyme
1 15-ounce can of rinsed beans
8 cups of baby arugula
Here’s how you prepare my healthy tuna salad recipe:
Mix your vinegar, olive oil, salt and pepper in a medium sized bowl.(This will serve as your dressing)
Once done, transfer around 3 tablespoons of the dressing into a large bowl and set aside.
Slice your tomatoes into bite size pieces.
Go back to your salad dressing and put in the tuna, thyme, olives, onions, arugula and beans and chopped tomatoes. Make sure to toss well so that everything is coated with the dressing.
Before serving, give it a dash of olive oil.
Like I said easy right?

This looks like an great, healthy alternative to the traditional mayo tuna salad that I grew up eating. I really like the simple dressing. I will defiantly be trying this recipe. Any thoughts on switching the sherry vinegar for red wine vinegar?
