Tomato Soup with Aromatic Spices

Most people think of tomato soup as something that comes out of the can. I don’t think that this is mostly about convenience, but rather the notion that making homemade tomato soup is too much of a chore.
I do agree that even the best homemade tomato soup recipe are no match for the convenience of popping open a can. But for those of you that want to experience the satisfaction of learning how to make homemade tomato soup, then read on.
Ingredients:
8 large ripe tomatoes (coarsely chopped and seeds removed)2 tbsp of extra virgin olive oil
1 large, coarsely chopped, yellow onion
1 teaspoon of paprika
1 scant teaspoon of finely chopped fresh ginger
1 scant teaspoon of grounded cumin
1 cinnamon stick
1 teaspoon of honey
2 cups of chicken broth
3 tbsp of chopped flat-leaf parsley
2 tbsp of chopped cilantro
1 tbsp of fresh lemon juice
Directions to Make Tomato Soup with Aromatic Spices, you need to:
Puree all the tomatoes using a food processor and set it aside for later.
Using a large soup pot, heat some olive oil over medium heat. Add the chopped onions and wait until they wilt. This should take at least 8 minutes.
Then add the cinnamon, cumin, ginger and paprika to the onions making sure to coat mix and coat them thoroughly.
Add your tomatoes, broth and honey along with half of your cilantro and parsley.
Raise the heat a bit to bring the soup to a boil.
Once it starts boiling, reduce the heat and let it simmer for 20 minutes, or until the soup starts to thicken.
Once the soup becomes thick, remove it from the flame and let it sit in room temperature for almost 3 hours before serving.
And just before serving it, squeeze in some lemon juice and add what’s left of your cilantro and parsley.

I love tomato soup; the aromatics and herbs in this seem to be just fine and would likely go well with the tomato soup. Is it possible to use a hand mixer instead of food processor while it’s in the soup pot?

I have been looking for an alternative to canned tomato soup and this may be it! Although I am not a cilantro fan so I will leave that out. Can’t wait to try it out!
