This sweet and sour shrimp dish recipe is my take on a dish that originated in Asia. Again, one of those dish I make that was inspired by the numerous unforgettable experiences I had when I was there.
I haven't been there in a while, but the flavors of this dish makes the longing more bearable.
Ingredients:
2 tablespoons low-sodium soy sauce2 tablespoons ketchup
3/4 cup chicken broth
2 teaspoons sugar
1 teaspoon Chinese chile sauce
1 teaspoon cornstarch
1 1/2 tablespoons rice vinegar
2 tablespoons vegetable oil
2 tablespoons minced fresh ginger
1 garlic clove, minced
1 1/2 pounds medium shrimp, peeled
How to cook your sweet and sour shrimp
Get a small bowl and whisk your vinegar, cornstarch, chilli sauce, sugar, chicken broth, soy sauce and ketchup together.
Now go heat a large skillet until it's piping hot.
Add some oil to the skillet making sure the cooking surface gets coated.
Thrown in your garlic and ginger and cook for 10 seconds.
Add in your shrimps and cook until they start to curl. The idea here is not to cook them totally, so do this for less than 2 minutes.
Whisk your sauce and add it to the shrimp. This time, cook until the sauce becomes thick and the shrimps are cooked through. This will take around 3 minutes.

This had great flavor!! The only change I made was used red bell pepper instead of green as I like the flavor of the red, yellow and orange peppers better. I served over jasmin rice. I will make this again but might add some zucinni or squash.

The Chinese chili sauce was unavailable in my area. Most stores had no idea what I was talking about. I still attempted the receipe, but wasn’t satisfied. Does anyone have any substitution suggestions for the chili sauce or perhaps a link to where I can find it?

I usually don’t like vinegar in any of my food but I tried it with this dish and it was great. It really balanced out the sweet tastes of the sauce

I was not expecting ketchup as an ingredient! This sounds really simple—I never know what to do with shrimp except steam and add lemon and cocktail sauce. (Creative, I know!) But I think I could do this! The sauce looks rather light, too—not super thick and gooey like you sometimes get in take out. Is that the recipe’s sauce on the plating?

I personally do not know about you, but I would remove both the chicken broth and the cornstarch from the original ingredient listing. This makes for a more genuine and real sweet & sour shrimp. Broth and starch are just time-consuming and unnecessary. A bit more of a raw and truly organic flavor adds a taste of health to the mix, and one lives longer from a healthier dish.
