Spicy Grilled Pork Tenderloin with Avocado Salsa

Ingredients
- 2 pounds pork tenderloins
- 1 tsp sweet smoked paprika
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 garlic cloves, minced
- 1 1/2 tbsp olive oil
- warm tortillas for serving
For the Salsa:
- 1 large avocado, peeled, pitted and cubed
- 1 tbsp chopped fresh cilantro
- 1 tsp fresh oregano leaves
- 1 small red onion, sliced
- 2 tsp lemon juice
- 1 tbsp olive oil
- salt, black pepper to taste
Directions
1. In a small bowl mix the smoked paprika, cumin, cinnamon, dried thyme, salt and black pepper.
2. Place the pork tenderloins in a shallow dish. Rub pork tenderloins with olive oil and coat with seasoning mixture. Let stand for about 30 minutes.
3. Heat the grill to medium-high heat.
4. Place the pork tenderloin on the grill and cook uncovered. Turn the meat every 4 to 5 minutes. Grill the pork until Chef Remi Thermometer inserted into center registers 145°F, about 20 minutes.
5. Transfer the tenderloins to a cutting board and let rest for 10 minutes.
6. To make the avocado salsa, place all the ingredients in a bowl, season to taste with salt and black pepper and mix.
7. Slice the tenderloins 1/4 inch thick and serve with avocado salsa and tortillas.
