Salmon Burger with Guacamole Sauce

With summer just around the corner, why not try this.
Ingredients
For the Burgers
1 1/3 lb (600 g) salmon piece or fillets, skinned1 1/2 tbsp (22 ml) wholegrain mustard
2 tbsp (25 ml) dry bread crumbs
1/2 tsp (2 ml) salt
1/4 tsp (1 ml) pepper
olive oil for brushing burgers
For the Guacamole Sauce
1 medium (150 g) avocado, peeled, pitted, and cubed1 tbsp (15 ml) chopped parsley
2 tbsp (15 ml) lemon juice
1 garlic cloves, minced
1/2 tsp (2 ml) cayenne pepper
1/2 tsp (2 ml) salt
The Rest of Ingredients
4 hamburgers buns2 small (180 g) tomatoes, sliced
1 small (70 g) red onion, sliced
8 lettuce leaves
Directions
Place the salmon fillets, mustard, breadcrumbs, salt and pepper into a food processor and process until finely chopped. Divide the mixture into 4 balls and shape the balls into burgers. Place them on a tray and put the tray in a refrigerator for an hour.
Before you start cooking, make the guacamole sauce.
Place all the ingredients in a bowl and coarsely mash with a fork. Set aside. Heat a griddle pan or barbecue until hot. Brush the burgers with olive oil and grill for 3 minutes on each side or until cooked through.
Use the Chef Remi Cooking Thermometer to test doneness. Insert the thermometer sideways and take the burgers off the grill at 160 °F (70°C).
Serve the burgers in buns with guacamole sauce, lettuce and sliced veggies.

This is a great healthy alternative to a burger!!! I love grilled salmon, smoked salmon, salmon in sushi, and especially love salmon patties/cakes! I have never had a salmon burger per se; however, I have had a salmon BLT that looks similar to this but will definitely have to try this recipe next time I’m looking for something to do with the salmon in my freezer!

I’ve never before had a salmon burger before but it is definitely a great alternative to just a simple hamburger. The addition of guacamole only helps to bring this dish to even higher heights. Save this one for your cookbooks!
