Salmon and Heart Shaped Pasta Salad with Creamy Dressing

OK, you and I both know that Valentine's Day can be daunting. After a day of running around after the kids, working, household chores.....is it any wonder that most couples decide not to bother?
And with Valentine's Day falling midweek this year, it becomes even more of a reason to just pretend it's not happening.
But I also know this kind of attitude is the start of couple's taking each other for granted. The trick is not to pick hugely intricate dishes for your other half. Not only does this take away your time and effort worries, your husband or boyfriend would also much prefer to spend Valentine’s with you (instead of looking at the back of your head as you slave away at the stove!)
So this week, I’m going to show you quick Valentine’s dishes that look far more impressive in comparison to actual effort. They’ll certainly impress my husband, and I’m sure they’ll impress your Valentine too!
Today, a lovely 'heart-shaped' pasta salad.
Your Ingredients:
3 thinly sliced green onions
350g of heart shaped pasta
415g can of tuna, flaked and drained of liquid
250g of halved cherry tomatoes
75g of baby spinach leaves
For the dressing
1/2 cup of Greek style yoghurt
1/2 cup of light whole egg mayonnaise
2 tbsp of lemon juice
2 tbsp of finely chopped fresh dill sprigs
2 tbsp of chopped and rinsed capers
How to make your Salmon and Heart Shaped Pasta Salad:
First thing you should do is fill a large saucepan with water and bring it to a boil. You then cook your heart shaped pasta following the cooking instructions found on its packaging.
Once the pasta is cooked, rinse it in cold water and place in a clean bowl.
You then add in your spinach, tomatoes, green onions and salmon and toss.
How to make your dressing:
Go and get a clean bowl and combine your lemon juice, mayonnaise, yoghurt, capers and dill.
You then season this with salt and pepper.
How to serve:
Place as much pasta as you want on 2 plates.
Get a spoonful of your dressing and place it on top of your pasta.
Serve it up to your Valentine with the sweetest of smiles and a knowing wink!
