Roasted Pork Knuckle with Boiled Cabbage

Roasted pork knuckles with boiled cabbages. Now if that doesn't make your mouth water, then nothing will.
So let me save you from reading all my babbling and get you started on this dish.
Your Ingredients
For the Potato Dumplings
100 g (⅔ cup) of plain flour
1 egg
1 bunch of finely chopped chives
salt and pepper
freshly grated nutmeg
For the cabbage
2 finely sliced red cabbages
2 finely sliced apples with its core removed
1 finely sliced onion
2 juniper berries
2 cloves
2 bay leaves
2 tbsp of sugar
250 ml (1 cup) of red wine (and a little bit extra)
2 finely sliced bacon rashers
1 tbsp of butter
For the pork knuckles
1 kg (2 pieces) pork knuckles
2 tbsp of salt
finely chopped garlic
olive oil
caraway seeds
How to make your roasted pork knuckle with boiled cabbage
To start with, this dish entails preparation a day before serving
Start preparing your cabbage and dumplings a day before. Boil your potatoes until their skin becomes soft.
Once done, leave potatoes to cool.
For your cabbage, get a bowl and combine them with your onion, apple and spices. Also add to the mixture wine, pepper, salt, pepper, sugar, bay leaves and spices. Allow to marinate overnight
On to day two!
Start by preheating your oven to 180ºC.
Get your pork knuckles and give them a generous rub down of oil, garlic, and a sprinkling of caraway seeds
Once done, get a baking dish and pour no more than 2 cm of water into the dish
Put your pork knuckles into the dish and roast for around 2 hours
To Cook your Cabbage,
Get your remaining onions, and fry them with butter and bacon.
Once fried, add a splash of red wine then add all the cabbage you marinated overnight.
Cover the pan and allow the wine to boil/cook your cabbage for 20 minutes over low heat.
Season to taste.
For the Potato Dumplings;
Go and peel the potatoes you prepared the day before and mash them to whatever consistency you prefer. (as for me, I like them really fine).
Add nutmeg, pepper, salt, chives flour and an egg into your mashed potato.
Now roll your mashed potato into a long sausage. Once done, cut them into golf ball sized pieces and roll into balls.
Now cook your dumplings in salted water until they start to float. This will take around 2 minutes.
To serve;
Place your pork knuckles on a plate and surround them with your dumplings and boil cabbage.

My husband would love this. I’ll bet the flavor is amazing, How can you go wrong with anything that has Bacon in it! Bay leaves are one of my favorite spices as well so i am really looking forward to making this for hubby! He is gonna trip out. We adore cabbage btw

I normally dont really like cabbage at all. It is usually much too bland and watered down for me but this recipe has definitely changed my mind! I cooked it for dinner one night and my kids even liked it! Would definitely reccomend.
