Pineapple Pork Skewers
Ingredients
1 1/2 pounds pork tenderloin, trimmed and cut into 1 1/2 inch peaces
1 cup store bought teriyaki sauce
2 small onions, cut into 1/2 inch pieces
3/4 pound peeled fresh pineapple, cut into 1-inch cubes
2 tbsp olive oil
Directions
Toss the pork with teriyaki sauce in a medium bowl and cover with plastic wrap and refrigerate for one hour.
Before grilling, soak the bamboo skewers in water for 20 minutes. Thread pork, red onion pieces and pineapple cubes on skewers.
Preheat a grill over medium heat. Brush the skewers with olive oil. Lightly oil the grill grates and grill kebabs in batches for 3-4 minutes on each side.
Use the Chef Remi Cooking Thermometer to test doneness. Insert the thermometer sideways and take the kebabs off the grill at 160 °F. Serve with your favorite salad.
