Passover Lamb Steak with Mango & Avocado – Chef Remi

Passover is the celebration of freedom of the Israelites from the dictatorship of Egyptian Pharaohs. There were 10 plagues sent to Egypt, the last one being that all firstborns would be killed.
However, as the Israelites were the chosen people, the plague 'passed over' all Jewish homes.
After all 10 plagues, the Egyptians couldn't wait to chase out their former slaves, so much so that the bread the Israelites made on that day had to be packed and taken before they had a chance to rise.
Since then, Passover has become a symbolic event celebrating emancipation, and the ancients would start their Passover festivities with the sacrifice of a lamb, eaten on the first day of Passover.
Passover would then last 9 days where nothing that is leaven can be eaten (i.e. no bread or dough which has risen).

So, to celebrate freedom, on the first day of Passover, make our sumptuous Lamb Steak Strips with Mango & Avocado, and be thankful that you and your loved ones live a free life!
Preparation time: 15 minutes
Cooking time: 5 minutes

Your Ingredients:
1/2 cup of fresh mint
1/2 cup of fresh basil
1/2 spicy green pepper
1 clove of garlic
1/4 teaspoon of salt
1/4 cup of extra virgin olive oil
2 pounds of lean lamb steak
2 avocados
1 mango
How to make your Passover Lamb Steak with Mango & Avocado:
1) Using kitchen shears, snip the basil and mint directly into a bowl (you can use a knife and cutting board, but using shears and snipping into a bowl is much easier!)
2) Finely chop the green pepper. Remove the seeds if you prefer less heat. Then add to the bowl.
3) Mince the garlic and add to the bowl, along with the salt and 3 tablespoons of olive oil. Mix thoroughly.
4) Rub your lamb steaks all over with the remaining olive oil.
5) Heat a grill pan on high heat. Once hot, place the steak strips and cook for about 1-2 minutes per side. Allow to cool for 1 minute.
6) Cut the steaks into strips using kitchen shears.
7) Cut in half and pit 2 avocados, and then cut the flesh into slices. Use an avocado slicer to make thin, even slices without any mess.
8) Cut the mango in half, pit, and then use a sharp knife to make slices.
9) Arrange the lamb steak strips on individual plates, and top with slices of avocado and mango.
10) Drizzle the basil and mint pesto on top – Enjoy!

I absolutely love that you included the history of Passover in this post! It’s so easy to forget that not everyone has the luxury of freedom like we do. That being said, this recipe looks delicious. Can’t wait to try it.

This was a must-try — a great twist on a classic with the avocado and mango. The avocado slicer is a brilliant invention! I always make a huge green mess in my kitchen LOL.

Fantastic. I used cajun spices from my wonderful local deli, and probably marinaded the cutlets for about an hour. The salsa was excellent. Fresh and light. I served with a mixed green salad and oven baked gourmet size potatoes….done in their skins and sprayed with olive oil. Very yummy!
