Mixed Salad Leaves with Berries, Avocado and Honey Mustard Dressing

I love my friends. And for those that have decided to choose a much healthier eating habit, I salute their courage and determination in turning their back on a meat. But then again, this means that when I have my friends over, I have to prepare a totally different set of meal for my non meat eating friends.
So excuse me my regular readers for making this post a bit personal, but this is for you Vincent! I hope this makes you happy. Now you owe me a bottle of good wine.
Your Ingredients
2 cups of, hulled and quartered, strawberries
10 oz. of spinach
1 cup of diced granny smith apple
1 cup of plain sliced almonds
2 diced avocados
¾ cup of sliced almonds
For the dressing
2 tbsps of gluten free mustard
2 tbsps of raw honey
4 tbsps of white vinegar
6 tbsps of olive oil
Salt & pepper
How to make your Mixed salad leaves with berries avocado and honey mustard dressing
Get yourself a small bowl and whisk together your mustard, honey, white vinegar, olive oil, and salt & pepper.
Now get a large salad bowl and thrown in your spinach. Add to that your strawberries, granny smith apples, avocados and almonds.
Toss everything and serve with your Honey Mustard Vinaigrette.

At first I was not a person that really liked avacado until i tried it, and I mean it was so good, but I didn’t know that you could mix this with fruit. I mean these meals that I am seeing on your list are amazing! seeing these items are making me feel creative.

Very creative recipe, I have never seen a blend of ingredients like that. Maybe like a modern Waldorf salad with the combination of fruit, green salad and nuts. Great idea, really keen to try this one. The addition of avocado is always a winner in salads too.

Is using non gluten free mustard OK? Is all mustard gluten free? Also, can I use any type of greens? This may work well in romaine lettuce spears too!
