Mint Chocolate Pancake with Raspberries

This dessert was not meant to be a Valentine's Day treat, but rather a regular Sunday afternoon treat. But ever since I started making it a couple of years ago, it seemed to have found its way to our dining table almost every other day.
So since Valentine's Day falls on a Tuesday this year, might as well share this treat with all of you. Not only is it absolutely yummy, but it is super fast and easy to make as well.
Your Ingredients:
¼ cup of Sugar
2 cups of Flour
2 tsp of Baking Powder
1 tsp of Baking Soda
½ cup of Cocoa Powder
2 tsp of Mint Extract
2 cups of Milk
1 Egg
⅓ cup of Canola Oil
1½ cup of Mint Chips
Raspberries
Chocolate Syrup for topping
How to make your Mint Chocolate Pancake with Raspberries
Get a large bowl and mix together your cocoa powder, baking soda, baking powder, sugar and flour.
Then add in your mint extract, canola oil, milk and egg. Stir mixture until it is free of lumps and is smooth.
Once smooth, add in your mint chips.
Get a griddle and place it over medium heat and spray it with some non-stick cooking spray.
Get your pancake batter and place around ¼ cup of it on the griddle.
Cook one side until it begins to bubble. Once that happens, flip it to the other side.
Cook for not more than 3 minutes or until it starts to brown.
Top pancakes with raspberries and chocolate syrup.
For the cookie cutter pancakes:
Lay metal cookie cutters on a heated griddle (Medium/Low Heat).
Place metal cookie cutters on a griddle that is over medium heat.
Spray both griddle and cookie cutters with non-stick cooking spray.
Add a teaspoon full of pancake batter into the cookie cutter till it’s half full. Cook until it starts to bubble.
Flip the entirety of the cookie cutter using a spatula.
Continue cookie for around 2-3 minutes until the pancake is lightly browned.
Continue to cook for 3 minutes until it starts to brown.
Take the cookie cutter from the heat and allow to slightly cool before removing pancakes.

This recipe looks amazing! Definitely will try sometime! I do have one question though. Does it have to be cooked on a griddle? Could I use a pan with oil instead?

Hey there, I just have a quick question. Im not a huge fan of raspberries, what other fruit could i put on top? I was thinking strawberries to stick with the Valentines theme, but what else would go well?

i think i would just go with rasp berries, its so divine and so sweet to go with, i actually tasted one recently but i think with the recipe above its going to be more delicious and fun.

today is tuesday , and my great wish is to cook chocolate pancake with russbarries. hope it will be different taste than other, but here one person is in my family Mr.watson ,my husband, he is heart patient, and has high cholestrol problems. i do want to know that there is any ingredeints that if added in this receipe that make this receipe in access of my husband, hope i will be guided

Is it possible that the use of dark chocolate
Bitterness of dark chocolate + sweet strawberry = sweet-and-sour (taste)

I’ve always loved chocolate pancakes but this recipe of yours has added a totally different dimension to making pancakes, and surprisingly, it’s quite simple! The addition of raspberry is also awesome because I love raspberries.

Pancakes are awesome,Strawberries are delicious and I love good chocolate.This item has become one of my favorite to begin with.Too sweetness can be a issue for some people for health reason but those who have no problem with sweet this item is gonna be special for them but this recipe must be cooked very carefully otherwise the taste is not gonna be as expected.

this recipe looks so yummy. As the chef say is a good a idea for valentine dessert I would say that I will try to prepare it for my kid and friend. Kids love dessert and specially mine love chocalate and pancakes as well. a good combiation for a quick dessert. Thanks for this interesting recipe.

These pancakes look so good. Not only that, the recipe is super easy to follow and anyone can whip these up in no time at all. I don’t recommend eating these on a daily basis though. It’s more of a special occasion kind of thing to spice things up a bit.
