Mini Pizza with Fried Egg

I have to admit that I when I first heard this dish, I didn’t pay much attention to it. But when I finally got to try one mini pizza with fried egg, It has become a dish that I make for myself at least once a week.
And let’s face it. Pizza during breakfast, who's guy in his right mind wouldn’t say YES to it?
Your Ingredients:
4 individual pizza bases
8 thin bacon rashers with rind removed
60ml of sundried tomato
125 grams of grated mozzarella
4 small eggs
12 ripe cherry tomatoes
Olive oil
Baby rocket leaves
How to make your Mini Pizza with Fried Egg
Get a baking sheet and line it with baking paper. Then get your bacon and spread it as a single layer on top of the baking paper.
Cook inside the oven until the bacon becomes crisp.
Remove the baking paper and sprinkle the baking sheet lightly with olive oil.
Get your pizza bases and place it on the baking sheet along with the sundried tomatoes.
Get a couple of bacon rashers and put them on top of each pizza base. Put some cheese on top of the bacon.
Once the cheese has mantled, break an egg on top of each pizza base. Make sure that the egg stays at the center.
Once the egg starts to cook, place some cherry tomatoes on top.
Cook until eggs are fully cooked and tomatoes have wilted. This will take about 6 minutes.
Before serving, garnish with rocket leaves.

It is interesting why this tasty omelet called pizza? :)
This food looks like the Georgian one, called “Ajarian khachapuri”. The main difference is that egg in khachapuri is not fully cooked.

This is an awesome recipe. To a lot of people egg on a pizza sounds super odd, however I have been ordering/making my pizzas like that for years. Great to see others are onto it! As a vegetarian this is an easy recipe for me to make meatless.

Mini Pizza with Fried Egg – I thought I was weird with my taste. The longer I look at this pizza, the more it seem right up my alley. Now, if I can down two large pepperoni pizzas in 15-20 minutes I’m certain this is no contest especially since I’ll do a hard-boiled in 30 sec. Personally I can see a preference for more eggs.

I thought I had fixed every type of pizza that there is on the market. Obviously I was wrong. Not only have I never fixed this kind of pizza until you posted this recipe I had never even heard of it. I am looking forward to trying this recipe and like Mitchell I think I will make a vegetarian version since we try to eat vegetarian three times a week.

I’ve never heard of an egg pizza before, and at first, the idea was a bit weird to me but after thinking about it it started to sound interesting. I’m excited to try this mini pizza recipe.
