Mexican Tacos with Chicken, Grilled Vegetables and Red Onion

Whenever I am in California, I try to eat as much as authentic Mexican tacos as I can handle. The simplicity and functionality of their presentation, plus the explosion of flavors in your mouth is just A+++ in my book.
And because I love them so much, lemme give you my take on Mexican tacos with chicken, grilled vegetables and red onion.
Your Ingredients
1 tub of reduced chicken stock
2 tbsp of vegetable oil
2 cloves of finely chopped garlic
1 tsp of ground cumin
1/4 cup of chopped fresh cilantro
2 tbsps of lime juice
1 thinly sliced red onion
1 1/2 lbs of skinless and boneless chicken breasts
2 chopped red or green bell peppers
2 tbsp of reduced fat sour cream
8 corn or flour tortillas
How to make your Mexican Tacos with Chicken, Grilled Vegetables and Red Onion
In a small bowl, combine your chicken stock, lime juice, cilantro, cumin, garlic and oil.
You then add your vegetables and chicken, toss and make sure that the chicken is coated thoroughly.
Now throw the chicken and vegetables into the grill, making sure that it is thoroughly cooked. This will take around 6 minutes.
Once done, take the chicken and vegetables and chop them into bite size pieces.
Add some sour cream on your vegetables and then serve with warmed tortillas.
