Leek Puree Soup With Sour Cream
Wisdom comes with age. And with that wisdom comes the knowledge that one should start thinking about his/her health.
Though I haven’t totally said goodbye to fat laden dishes, I have to say that I have started to appreciate the joys of eating healthy.
And for this post, I would like to share one of my favorites.
Your Ingredients
1 and 1/2 tbsp of unsalted butter
2 rinsed leeks, pale green and white parts only, cut into bit size rounds
1 pinch of nutmeg
2 tbsp of sour cream
How to make your Leek Puree Soup With Sour Cream
Put your leeks in a steamer or in a basket over boiling water and steam for 5 minutes.
Once steamed, drain excess water out of your leeks using paper towels.
Once drained of water, put the leeks into a blender or food processor and puree.
Add in the other ingredients along with salt and pepper.
Put your puree into a sauce pan and let it simmer over low heat.
Serve the soup hot.

The ingredient’s are simple yet the taste sounds complex. I have never eaten a Leek & didn’t want to thinking it would taste bad until now! The whole process sounds simple & easy being done in less time then most meals yet the taste sound complex. This is also a nutritious meal from the sounds of it.
