When you say room temperature. Do you mean you let it get to room temperature and THEN let it sit for 30 minute or you just wait 30 minutes after you take it out the fridge?

I know offal meats are packed with nutrients and very good for you but it is so hard to cook and present them. what other organ meat would you recommend with this roasting recipe? i would really like to see more ways to prepare these types of meats, they are underused by the at home cook.

Ahh….I do not really like chicken liver, but I can definitely see myself making and enjoying this recipe with boneless chicken. I am sure, it would taste as good as your dish. What do you suggest?
