Heart Shaped Chicken and Pomegranate Salad

Nothing says I Love You on Valentine's Day than a huge heart symbol. And though my wiseass of a husband would always jokingly comment that “honey, you do know that a human heart looks more like a fist right?” to which I would then gleefully reply, “It looks like this right?” (showing him my clenched fist) and then add “Would you rather have this on your lip?”.Ahhhh, the joys of married life.
So for this Valentine's Day I plan to make a huge heart shaped salad topped off with fresh Pomegranate seeds.
Regardless of the constant banter I get from him, I know that it’s his way of indirectly telling me that he still loves and appreciates me. And the dish I am sharing with you guys now is a reminder that I also still love him as much as the day we met.
Your Ingredients:
4 skinless and boneless Chicken breasts
80 grams of Walnut
180 grams of Cheese
1 Beetroot
1 Pomegranate
5 Eggs
200 grams of Mayonnaise
Salt and pepper
How to make your Heart Shaped Chicken and Pomegranate Salad
First is to boil your chicken breasts in salted water until they are cooked.
Once done, take out all the meat then cut them into bite size pieces. Set aside for later (This will take around 15 to 20 minutes).
In another pot, also boil your Beets. Once done, peel, grate and set. aside for later (This takes around 30 to 45 minutes).
Now go boil your eggs and grate them once done. Set aside for later.
TIP:
To save time, boil your chicken breasts, beets and eggs at the same time in different pots.
Grate your cheese and set aside for later.
Now open up your Pomegranate and take out all the seeds. Set aside seeds for later.
Plating/Preparation/Serving
This dish has a total of 6 layers, and each layer must be seasoned with salt and pepper and must have a generous amount of mayonnaise on top.
Now in the event that you don’t have a heart shaped dish to use as a mold, just use whatever you have available – though that would totally void the name of the dish above.
You can also try to shape it by hand, and if you managed to come up with a shape that remotely resembles a heart, please share your method on the comment section below as I have tried doing it numerous times in futility.
Anyway, the layers for this dish are as follows:
1st (bottom) layer is your chicken
2nd layer are your grated eggs
3rd layer is your cheese
4th layer are your walnuts
5th layer are the grated beets
6th layer are the pomegranate seeds

Since Valentine is relatively close, I might try recommending this to some of my female friends, so that they can use it in wowing their VAL… But my question is this, can you mix the layer of yours have to be followed strictly?

Those pomegranate seeds really do have that certain red tint that is needed to make a convincing heart shaped dish. These layers look fantastic in presentation, and it seems as though the flavors would be quite good when mixed. I have never tried chicken and pomegranate in the same dish, but this recipe makes me want to try it out!

This looks delicious. Im a bodybuilder and I’m always looking for creative ways to dress up bland proteins like chicken. Looks easy to prepare as well, not too many fancy or expensive ingredients!

All the recipes are so good here and thankfully, I found this one. The valentine day is already near and it would be a great idea to impress our loved ones. The pomegranate seeds used on the top makes it look really appealing.

Looks delicious, I am curious though as to how to shape the bottom. I tried the recipe and got the top in the heart shape but I struggled with the bottom. Thanks so much for sharing though!

Adding this to my valentines day menu :) The hubby loves Chicken salad, and this recipe looks delish! You don’t find many heart shaped appetizers, that actually taste good. I’m so excited to try this out.
