Grilled Chicken Wings In Homemade Sriracha Sauce, Topped With Fresh Microgreens
Back when I lived in the UK, this dish was not just requested, but demanded by my friends whenever we see each other for weekend soccer match.
Your Ingredients:
1/2 pound of red serrano peppers without the stems
4 cloves of garlic (peeled)
3 tbsp of light brown sugar
1 tbsp of kosher salt
1/3 cup of water
1/2 cup of distilled white vinegar
After 5 days, transfer the fermented mixture to a blender and vinegar;. Blend until the mixture becomes smooth.
Your Ingredients For Your Grilled Wings With Homemade Sriracha
4 pounds chicken of wings1 tbsp of baking powder
1 teaspoon of kosher salt
For the Sauce
4 tbsp of butter
1/2 cup of your homemade Sriracha
2 tbsp of honey
1 1/2 tablespoons of soy sauce
1 tbsp of finely chopped cilantro
1 tbsp of lime juice (freshly squeezed if possible)
1 teaspoon of rice vinegar
How To Make Your Grilled Wings With Homemade Sriracha
Pat the wings with paper towels to make sure that they are dry. You thenthrow them in a large bowl along with salt and baking powder. Make sure that all the wings are coated evenly. Once done, transfer the wings on a baking sheet and refrigerate for no less than 8 hours.
Over low heat, start melting your butter. Add in your vinegar, lime juice, cilantro, soy sauce, honey and homemade Sriracha until everything is evenly mixed. Set aside the mixture.
Fire up the grill. Once the grill has reached the desired temperature, start placing the wings on the grill and occasionally brush them with your sauce for at least 40 minutes until the skin becomes crisp.
Transfer the cooked wings to a large bowl. Add what's left of your sauce and coat the wings.
Serve using a large plate with microgreens for garnish.

These wings are the bomb.So many different tastes. I enjoyed these wings over a few beers with my buddies. My wife cooked them and I thought I might lose her by the end of the night.

Chicken is one of my favorite proteins to work with and I love Siriracha sauce as well. It looks really good and dipping it into blue cheese will make it the best tasting wings ever.
