Four Ingredient Pistachio Biscuits

And they're back! Running around my kitchen, opening cupboards, opening the fridge, wanting to find something to snack on!
If you have kids, you'll know how exasperating it is when they just turn up demanding to be fed......and dinner is still hours away! No wonder so many food companies have created so many different snacks that we can just hand over to our children.
But I know I'm not the first mom that's thought 'What's really in those packet of cookies?'
My motto now is 'be prepared!' And with these pistachio biscuits made with just four ingredients, I can whip up big batches and keep them in my fridge. Whenever the kids get a 'snack attack', I just get some of these out and stick in the oven for 15 minutes. Problem solved!
My family loves nuts of all kinds, and we always end up buying the Sincerely Nuts range. As their name suggests, you'll always get just wholesome, delicious nuts!
Your Ingredients:
3/4 cup of Sincerely Nuts Pistachios (and about 50 nuts for garnish)2 cups of brown sugar
1 2/3 cups of almond meal
2 eggs
How to make your Four Ingredient Pistachio Biscuits
Get your food processor out and process together the pistachio nuts (remembering to reserve about 50 for garnish) and 1 cup of brown sugar. Make sure all the pistachio nuts are ground finely.Now, add in the second cup of brown sugar and the almond meal and process till all the ingredients are thoroughly combined.
In a small bowl, beat the eggs well until the yolk and whites are combined.
Add the eggs into your the mixture in your food processor and combine well.
Remove the mixture from your food processor and place in a big bowl. Now put into the fridge for at least 8 hours (I usually leave it overnight).
Heat up your oven to about 330℉ , and line your baking sheet with parchment paper.
Use a spoon to take out small spoons of the biscuit dough and use your hands to roll into ball. Then use your hands to flatten slightly, and place onto your baking sheet.
Use your reserved pistachio nuts from before, and place one or two at the center of each biscuit.
Bake your biscuits for about 15 minutes. They should be browned around the circumference.
Let them cool for a few minutes, and then watch them get devoured.
Mom's Secret Tip:
I keep a stash of various nuts in my cupboard so I can change up this recipe to keep things from getting boring. Try making these biscuits with walnuts, peanuts, macadamia, or any nuts you like!

This is a straight forward recipe. It’s simple and I like you can use different nuts. I might have to make this for my kids or my auntie one day. Is the texture really like biscuits or is it like cookies but just called biscuits? What can you use instead if you don’t own a food processor?
