Energy Bites with Mint Choc Chip

What better way to bond with your kids than having them help you make treats? So for my first celebration of National Chocolate Mint Day, I decided we'd make some yummy Energy Bites with Mint Choc Chip.
The kids are excited! The youngest can’t stop talking about how many he can make and store. I ask myself, do they need any more energy?! But they do. All of them are part of different sports clubs, so I have to make sure they have all the energy they need.
What I like about making treats for my kids rather than giving them store bought products is the fact that I have complete control as to what they’re eating. It's why I prefer using chocolate chips from SunSpire as they are harvested and produced without chemical fertilizers or pesticides. The less chemicals my kids ingest from food, the healthier they are and the less paranoid I am!
Anyway, this snack only takes 20 minutes to make. And what’s good about it is that you can store it in the fridge and it will last for days.
Your Ingredients:
2 cups of old fashioned rolled oats
3 tbsp of cocoa powder
1/3 cup of creamy peanut butter
3 tbsp of honey
1 tsp of peppermint extract
1/3 cup of SunSpire Semi-Sweet Baking Chips
2 1/2 tbsp of water
How to make your Energy Bites with Mint Choc Chip
Get a large bowl and mix all the ingredients together. Make sure that everything is mixed together before moving on.
Roll mixture into 20 balls. Try to make the balls equal in size as you can.
Squeeze the ball mixture to get them to stick and hold its shape.
Place in a container and throw in the fridge
You’re done!
Mom’s Secret Tip:
No bake recipes like this one are easy to make and can be stored for a few days. Also, it can be used as your kid’s treat at school, sporting event or even at picnics.

I’ve made energy bites similar to this in the past, so I know that they really can be a great source of quick and healthy calories if you’re in a rush. I haven’t tried rolled oats though, they seem like they would be a great addition!

These look absolutely delicious. There is nothing I love more than cookies, except cookie dough. I am really excited to try these out for desert soon, and I know my kids will be really excited as well!!

This simple and easy recipe is perfect to quickly put together. A great opportunity to create tasty snacks that are healthy and taste great. Making a batch to keep stored in the fridge is the best thing as I can come and get them whenever I need a burst.

If I make this for this coming Eid Ul Fitr it must had been finished by all my little cousin. I guess I did’t have a chance to taste it.. kids love cookies so much.. sometimes i fight with my younger sister over one last cookies.. but then I still don’t have a chance.. If i have time to make this cookies I just want to hide it from them so that I can eat it all alone..

I must make these! A nice treat to have with my coffee. I might try swapping the peppermint for vanilla or coffee extract. You could even make them nut free by using sunbutter.
