Both my mother and my grandmother were real cake baking fans. You'd think it should be in the genes. But I'll be honest. My attempts at baking my own cakes from scratch have had limited success.
From drying out cakes by over-baking them, to soggy bottoms and sunken middles – you name a cake disaster, and I've had it!
I remember by grandmother giving me this sagely advice. “Baking is alchemy. What you can produce from just a few eggs, flour and sugar is the food version of turning inexpensive metals to gold!”
Very true words. But is it any wonder that baking cakes remain one of those skills that many of us find daunting! So much can go wrong!
So I'm grateful to my neighbor for giving me this easy coconut cake. I've made it 3 times already. Each time I got great results! So even if you've sworn to never bake a cake again, give this easy recipe a go – you won't regret it.
With a simple recipe like this, something I picked up from my wonderful neighbor, Susie, is that you really need to make sure you have top-notch ingredients.
More complex recipes have the bonus of being able to mask inferior ingredients. But with a simple recipe like this, inferior ingredients will just let you down.
I love Let's Do Organic Unsweetened Shredded Coconut. I swear, if I was blindfolded, I doubt, I'd be able to tell the difference between this and freshly shredded coconut!
Your ingredients:
1/2 cup of sugar
1/2 cup of butter
2 eggs
1 cup of Let's Do Organic Unsweetened Shredded Coconut
1 1/2 cups of self rising flour
Half a lemon
How to make your Easy Coconut Cake
First, heat your oven to 375ºF.
In a mixing bowl, add the sugar and butter, and mix well using a wooden spoon.
Add in the eggs and the shredded coconut and mix thoroughly.
Squeeze in half a lemon and keep mixing.
Sieve the flour into the mixing bowl and gently fold using a figure of 8 movement with your spoon.
Squeeze half a lemon into the mix.
Line a cake tin with parchment paper and then pour the mixture into the tin.
Bake your coconut cake in the oven for 30 to 40 minutes.
Mom’s Secret Tip:
Not many of us have the time to bake cakes during the week. So do what I do. Make a big cake at the weekend, and then your family can have slices during the week

This is definitely super simple recipe. Coconut is always in favorite list right from Childhood days. Less time consuming . I am going to try this weekend. I am sure my kids are going to love it. Will post the outcome soon. :-).
