Creamy Indian Style Rice Pudding

It’s National Indian Pudding Day today. Why, I don’t know, but it sounds yummy! To celebrate, let me share a recipe with you.
It wasn’t until a recent family vacation to India when I realized how much of a body fuel rice was. With a lot of Indian people working in agriculture, it’s no wonder that workers needed a carbohydrate rich diet to keep them going the entire day under the sun.
Now back in the States, when we think of carbo loading, it’s usually pasta. Even I have been serving the kid’s pasta before their weekend football, unaware that there was a healthier alternative. Well not really “unaware”, but more of “that’s the least of my worries for now” type of unaware.
Anyway, I have nothing against pasta. Truth is, I love pasta! But when it comes to my kids, I become overly protective regarding what they eat. I even go to the trouble of sticking with a specific brand of rice, Nishiki Premium Rice, as its all natural and not packed with any preservatives.
Call me paranoid, but hey, these are my kids we’re talking about.
Your Ingredients:
2 cups of milk
1¼ cups water
1 cup of medium grained Nishiki Premium Rice
¾ cup of heavy or coconut cream
¼ cup of maple syrup
⅛ tsp of sea salt
1 tsp of vanilla extract
How to make your Creamy Rice Pudding
Get your Nishiki Premium Rice and run it through a fine mesh colander.
Rinse well with a few changes of clean water.
Once done, place rice in an Instant Pot.
Add in the maple syrup, milk, water, sea salt and stir to mix everything together.
Once done, seal the pot and close its vent.
Start cooking the rice by clicking on the porridge button of the pot. The rice will take around 20 minutes to cook.
Once the timer starts to beep, slowly release the pressure for at least 10 minutes. After, press the cancel button and open the vent.
Once pressure has been released, open the lid and add vanilla and cream to the rice.
Stir until the cream and vanilla are thoroughly mixed into the rice and serve with whatever toppings you want.
Mom’s Secret Tip:
Slow cookers are an absolute Godsend for moms with little time. Just load up the pot, set the timer, and that's it! No waiting by the stove or cleaning up gunk because the pot has boiled over. My slow cooker of choice has to be the Instant Pot, because it's not only a slow cooker, it's a yoghurt maker, rice cooker and steamer all-in-one!

Like you, I too love pasta. Thank you for recommending Nishiki Premium Rice for this recipe and explaining why. I’ve always admired rice pudding and this recipes has made me realize how easy a slow cooker makes this process. Excited to try this out.

You just gave me some great ideas for making something different. I don’t have a pressure cooker, only a rather large canner. This would work using a heavy-bottom pan with a lid. I like the addition of star anise as a garnish in the photo. I saw Gordon Ramsay use it, tried it, and think it is simply fabulous. Pre-rinsing the rice really makes a big difference in making a perfect dish.

Hi, I am born and brought up in India. I am aware of pudding made with vermicelli (called as kheer). However, I came to know about a new recipe with this article. Good to know that pudding can also be done with Rice. I would definitely try this out.

Great idea for a different take on rice pudding, so much of the store bought rice pudding contains lots of additives and sugar. I’ll definately look out for Nishiki rice as well!

This looks and sounds delicious! My sister makes homemade rice pudding using only condensed milk, rice and sugar. It’s so simple and so good,it’s hard to stop eating it once I’ve started. My mother-in-law folds egg whites into hers and adds fruit but it makes it a little too “busy” happy sweet eating people!

I hadn’t thought of using coconut cream in rice pudding. I LOVE coconut cream. Totally giving this a go. I haven’t had rice pudding in a long, long time; thanks for this!
