Crab Stuffed Fish with Lemon Drizzle

My eldest son approached me in the kitchen earlier and asked me what I was cooking. I replied that since it was Crab-Stuffed Fish Day I was making Crab Stuffed Fish with Lemon Drizzle.
The reply I got was straight out of his father’s “how to annoy my wife" book. My son said, “There’s a day for that? What next, school lunch day?” I replied, “You want to go hungry?” And of course, just like his father, I got a chuckle as he exited the kitchen in a victorious stride... Yes, just like his father.
Anyway, this recipe takes only 40 minutes to make. It’s very well suited for impressing an unexpected dinner guest with your pseudo gourmet cooking.
I suggest that you don’t get just any crab meat but go for Miller's Select Special White Crab Meat. Fresh crab is always the best, but it's expensive! I've tried other tinned crab, but they can smell very fishy and off putting. Miller's is the only brand I've found that gets close to fresh crab – great for stashing in the cupboard for unexpected guests!
Your Ingredients:
2 pounds of white fish
1 tbsp of olive oil
1/2 cup of chopped onion chopped
2 cloves of finely minced garlic
1 cup of Miller's Select Special White Crab Meat
2 tbsp of cream cheese
1/2 tsp of fish seasoning
Salt and pepper
2 tbsp of chopped finely garlic chives
Lemon Butter Sauce
2 tbsp of butter
Juice of one lemon
How to make your Crab Stuffed Fish with Lemon Drizzle
First, you need to pre-heat your oven to 190 degrees C.
Now get a medium sized sauce pan, drizzle it with a bit of olive oil, and place it over medium heat .
Once the oil starts to bubble, throw in the onions and cook till it caramelise. Once this happen, add in your garlic.
You then add in your Miller's Select Special White Crab Meat along with fish seasoning mix, cream cheese, garlic chives and salt and pepper. Stir until everything becomes mixed.
Once done, remove the crab mixture from heat and allow it to cool.
Now get your white fish and remove all its skin and bones.
Place the fish on a cutting board with the part where the skin used to be facing you.
Spread a generous amount of crab meat mixture of each fillet.
Now roll each fillet and lay with its seam side down on a greased baking pan.
I another pan, start melting your butter over medium heat.
Once melted, get a small cup, pour the melted butter in it and add lemon juice, seasoning and salt and pepper.
Once done, drizzle mixture over the crab stuffed flounder.
Thrown crab stuffed flounder in the oven and cook for 25 minutes.
Drizzle dish lemon butter sauce before serving.
Serve hot.
Mom’s Secret Tip:
Keeping tins of crab meat in the cupboard can transform any simple dish into a one worthy of a Michelin star. If you want a quick 40 minute meal without sacrificing the taste and quality of your crab meat, then go buy the best quality crab meat you can get your hands on.

What a nice take on the traditional breadcrumb-based crab filling! You mention “fish seasoning” in the recipe. I don’t know what that means. Is it anything like Old Bay brand seasoning?
