Chocolate Covered Raisins (3 ingredient)

Homemade candies are the ultimate! And these chocolate covered raisins are so delicious, everyone will keep coming back for more.
I always keep in mind that, the simpler the recipe, or the fewer the ingredients, the more I need to pay attention to the ingredients I am using. The few ingredients I do use really stand out as there are no complex cooking techniques, or a myriad of other ingredients, to help mask the quality.
When using chocolate, aim to use one with high cocoa solids, and preferably one that's organic.
And, in this recipe, I've used Newman's Own Organics Organic Raisins. Wow, can you taste the difference between 'normal' raisins and these juicy versions!
Make a batch of these over the weekend, and feel smug when the kids don't ask you for money to get candies at the local shop – they'll be devouring your homemade creations, and you'll know there's nothing but goodness going inside of them!
Your Ingredients:
1 1/2 cup of Newman's Own Organics Organic Raisins
1/4 cup of dark chocolate
1/2 tablespoons of coconut oil
How to make your Chocolate Covered Raisins (3 ingredient)?
First, melt the chocolate and coconut oil. There are 2 methods. You can place both into a non-metallic bowl and then microwave, but make sure you check the chocolate every 30 seconds.
Or, you can place the chocolate and coconut oil in a metal bowl, and then place this on top of a pan of boiling water on the stove. The coconut oil really helps to thin out the chocolate, making it spread more evenly onto the raisins.
Stir the chocolate well so it is smooth.
Now, add 1/2 cup of raisins at a time to the chocolate and coconut oil and stir well. All the raisins should be completely covered in chocolate.
Place some parchment paper onto a tray or baking tin. Now pour in the chocolate and raisin mixture and flatten into a thin layer.
Place the whole tray into the freezer for about 5-10 minutes to firm.
Use your fingers to break the chocolate raisins apart and devour!
Mom's Secret Tip:
Keeping different types of dried fruit in the cupboard is a quick cheat as you can dip almost any dried fruit in chocolate and turn them into candies. Plus dried fruit can be stored for weeks – perfect for 'emergency' candies!

I love cooking for my kids at home over buying prepackaged from stores. My children love chocolate and I’m always trying to find ways of making candy healthier. I will be trying this receipt this week! This would be delicious with bananas or papayas!

I just made this with my own choosing of chocolate it was amazing easy and delicious! I melted my chocolate in a pot and used foil so that none of the mess got into the pot! yUMMY
