Chinese Mandarin & Chicken Salad
I have no idea if this is authentic Chinese salad, but it’s delicious, and my 11 year old devours it, so who cares?!

Your Ingredients:
- 2 cups of red cabbage
- 3 cups of lettuce
- 2 cups of chicken
- 1 instant Ramen packet
- 1/3 cup of green onions
- 1 garlic clove
- 1 teaspoon of ginger
- 1/2 cup of carrots
- 1/2 cup of mandarin oranges (from a jar)
- 1/4 cup of sliced almonds
- 1 tablespoon of hoisin sauce
- 2 tablespoons of soy sauce
- 1/4 cup of rice wine vinegar
- 2 tablespoons of honey
- 1 tablespoon of sesame oil
- 1/2 cup of vegetable oil

How To Make Your Chinese Mandarin & Chicken Salad:
- Shred your red cabbage and lettuce using a sharp chef’s knife and wooden cutting board.
- Shred your chicken easily with heavy duty kitchen shears.
- In a bowl, place the Ramen noodles (you can discard the flavor packet) and crush using fingers.
- Using a precise paring knife, thinly slice the green onions. Next, skin your garlic clove by crushing it between a cutting board and the knife. Then, mince finely.
- Peel your ginger using a swivel peeler, and then mince finely using a paring knife.
- Shred the carrot easily by using a food grater.
- Drain your mandarin oranges.
- Place the cabbage, lettuce, chicken, ramen noodles, green onions, carrots, mandarin and almonds into your salad / presentation bowl and toss together.
- In a separate small bowl, use a small balloon whisk to whisk together the minced ginger, minced garlic, hoisin sauce, soy sauce, rice wine vinegar, honey and sesame oil.
- Now, while whisking, slowly pour in vegetable oil, and keep whisking until the dressing comes together.
- Drizzle your dressing over you salad, toss well to combine, and serve your salad with serving tongs.

That definitely sounds like a tastey Salad. I enjoy recipes that use Ramen Noodles for a nice added crunch. Looking forward to trying out hoisin sauce for the first with this recipe.

I have noticed citrus fruit goes well with chicken. My daughter would only eat chicken after I began basting it with either orange or lime. I will definitely be trying out this recipe as the whole family adores Chinese food.
