Chicken Satay with Peanut Sauce…..Remi Style!!

Ingredients
1 1/3 pound (600 g) chicken filets, cut into ½” stripes
16 bamboo skewers
For marinade
1 tsp lemon zest2 tsp lemon juice
1 tsp coriander seeds or ½ tsp ground coriander
2 tsp turmeric
1 tsp chili powder
2 tsp soy sauce
2 tbsp oil
For peanut sauce
3 tbsp peanut butter1 tbsp lemon juice
3 tbsp Greek yogurt
1 garlic clove, minced
pinch of chili powder
Directions
Place all marinade ingredients in a blender and process until smooth. Place the chicken in a shallow dish, add the marinade and gently toss to coat. Cover the dish with plastic wrap and refrigerate for 2 hours.
To make the peanut sauce, mix all the ingredients together until well combined and set aside. Before grilling, soak the bamboo skewers in water for 20 minutes.
Thread chicken onto skewers. Preheat a grill over medium heat. Lightly oil the grill grates and grill chicken in batches for 2-3 minutes on each side.
Use the Chef Remi Cooking Thermometer to test doneness. Insert the thermometer sideways and take the chicken off the grill at 165 °F (74°C).
Serve with peanut sauce and your favorite salad.
