Chef Remi’s Fairly Healthy Gluten Free Chocolate Chip Cookies for Kids!

Ok Ok, for you aswell Mum or Dad!
They are a bit gorgeous even if I do say so myself. You wouldn’t know they’re cooked with almond flour rather than the usual very unhealthy white flour full of all sorts of nasties that play havoc with our digestive system.
Who knew you could be kind to your body and still enjoy great tasting cookies!
In fact I have to just point out here that my 10 year old is the fussiest eater in the world and if you’re reading this thinking yours is fussier I challenge you. I really do!
But she loves these cookies, so even if your child will eat nothing but rice & tomatoes, try these, you’ll be on a winner!

Ingredients;
1/2 cup palm sugar or brown sugar1/2 teaspoon baking soda
Pinch of salt
Healthy portion of butter (melted)
Drop of Vanilla Extract
1 x large egg
2 cups of almond flour
1/2 cup of chocolate chips (we like Giradellis, but any will do)
Instructions;
1. Mix together sugar, baking soda, salt & butter and mix well using the Chef Remi small whisk until nice & smooth.2. Add in the egg, vanilla extract, flour & chocolate chips and mix about until you have a nice dough.
3. Lay a Chef Remi Grill Mat in your baking tray and using your hands (great fun to do this with the kids by the way), scoop up balls of the mixture and lay on the grill mat.
4. Pop it in the oven (about 190F) for 10 - 15 mins.
Voila!!!!

These cookies look like they have a great texture given that it is gluten free! My kids and husband would love the nutty flavour of the almond meal, looking forward to giving this recipe a try on the weekend.
