Bacon Beef Burgers
Ingredients
2 red onions, thinly sliced4 burger buns
4 ounce sliced bacon
1 1/2 pound ground beef
1 1/2 tbsp Dijon mustard
2 tsp chili flakes
1 tsp smoked paprika
4 thin slices Cheddar cheese
2 large gherkins
2 cups store bought cabbage coleslaw
1/2 cup arugula
salt, black pepper to taste
oil for frying
Directions
Heat a skillet over medium heat. Add the bacon and cook for 5 minutes or until bacon is crisp. Remove the bacon from the skillet and crumble it.
In the same skillet, pour oil to depth of 1/2 inch and heat it over medium-high heat just until it’s nearly at the smoking point. Add the onions and cook for 5 minutes stirring frequently or until onion is soft and light golden. Season to taste and transfer to a bowl.
In a large bowl place the ground beef, crumbled bacon, chili flakes, mustard and smoked paprika. Mix well to combine and form four even-sized 1 inch thick patties. Arrange on a tray, sprinkle with salt and pepper and chill for 5 minutes. Heat 1 tablespoon oil in a large frying pan on high heat. Add the patties to pan and cook 5 minutes until golden. Turn the patties and top with cheese. Cook for a further 3-5 minutes until cooked through. Use the Chef Remi Cooking Thermometer to test doneness. Insert the thermometer sideways and remove the burgers from the pan at 160°F. Set aside. In a small bowl mix the coleslaw and mayonnaise. Season to taste.
Serve the burgers in buns with arugula, coleslaw, gherkin slices and fried onions. Serve with your favorite salad or French fries.

A high quality bacon cheeseburger is my FAVORITE thing to eat at a restaurant (I rarely cook meat at home). But this delicious-looking burger here? I love the fried onion aspect. And the bacon’s in the burger. Haven’t tried that ever. Thanks for the recipe!
