Halloween Pumpkin Chutney

But now you have all this leftover pumpkin flesh that you don’t want to waste, but you’re also not sure what to do with it. Turn it into pumpkin chutney!

Here’s how to preserve the delicious taste of pumpkin, well after Halloween is done and dusted – enjoy it with crackers and cheese!

Ingredients: 
  • 12 cups of pumpkin flesh
  • 2 tablespoons of salt
  • 3 oranges
  • 2 lemons
  • 2 cups of light muscovado sugar
  • 2 1/2 cups of cider vinegar

Directions: 

How to make your Halloween Pumpkin Chutney

  1. Chop up any large pieces of pumpkin flesh, using a sharp chef’s knife and wooden cutting board, and place into a large bowl. Sprinkle with salt and toss well. Cover the bowl and leave overnight in a cool place.
  2. Drain any juices from the pumpkin in the bowl, wash in cold water, and then drain again to remove excess moisture.
  3. Peel, segment and remove the pith from your oranges and lemons, using a precise paring knife.
  4. In a heavy bottomed pan, place the oranges and lemons, the drained pumpkin, the sugar and the cider vinegar.
  5. Over a medium heat, bring the mixture to a boil. Then reduce heat to bring down to a simmer. Keep the pan uncovered and simmer for 40 minutes, stirring occasionally with a kitchen spoon.
  6. Allow the chutney to cool before storing it in sterilised jars and sealing.

This is my second of this particular brush. I like the first one very much and it lasted through many cleanings. It was also very strong. I have broken some lesser made brushes. My only complaint is that the first one had a hook on it that I could hang in a specific spot on the grill. I ordered this one specifically because I though it would have the hook on the end like it predecessor. Alas, it didn't. We drilled the end and installed a hook ourselves. I would have given it 5 stars had it come with the hook attached. I would suggest not removing the hook for future orders. (It still shows in the picture on the website)
