Your Ingredients
- 4 bacon slices
- 1 shallot
- 2 tablespoons of red wine vinegar
- 4 tablespoons of extra virgin olive oil
- 1/4 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 5 ounces of arugula
- 1/3 cup of goat cheese

Directions
How To Make Your Goat's Cheese & Arugula Salad with Warm Bacon Vinaigrette:
- Heat a medium skillet on medium heat and, when hot, place the bacon slices and cook for 6 minutes until crispy.
- Pick out the bacon strips, allowing the dripping to drain back into the skillet using a slotted spatula. Next, crumble the bacon.
- Using a precise paring knife and a wooden cutting board, finely mince the shallots.
- Place the shallots into the bacon dripping and sauté for 2 minutes, until they are tender.
- Move the shallot and drippings into a small bowl. Add in the vinegar, oil, salt and pepper, and whisk well using a small balloon whisk.
- In your salad / presentation bowl, place the arugula and drizzle over the vinaigrette. Toss well.
- Add the bacon on top, and crumble over the goat’s cheese. Serve your salad with serving tongs.
