Christmas Apple Walnut Stuffed Pork Roast
Christmas is a wonderful time, but with all the organisational skills required for Christmas (buying the right presents, who to invite etc), it’s worth getting a head start on food ideas.
Here’s a simple recipe that is sure to please everyone at Christmas, while giving you time to enjoy this special occasion with your loved ones, instead of slaving away in the kitchen all day….

Total time: 1 hour 10 mins / Servings: 8
Ingredients:
- 5 tablespoons of butter
- 1 small onion
- 1 celery stalk
- 1 apple
- 1/2 cup chopped walnuts
- 5 cups of coarse dry breadcrumbs
- 1 cup of unsweetened applesauce
- 1 1/2 cups of water
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground cloves
- 1/4 teaspoon of ground ginger
- Freshly ground pepper to taste
- 1 boneless rolled pork loin roast (about 3 pounds)
N.B. Use Chef Remi Measuring Cups Set and Chef Remi Measuring Spoons for accurate measuring of ingredients.
Directions:
- Preheat oven to 325°F.
- Using a sharp chef’s knife and cutting board, chop the onion and dice the celery stalk.
- Peel your apple easily using a Y-peeler, and then core and chop using your chef’s knife.
- Chop walnuts (if not already chopped).
- In a saucepan, melt the butter over a medium heat. Stir in the onion, celery, apple and walnuts, using a solid kitchen spoon, and cook for 5 minutes until vegetables are tender.
- Add in the breadcrumbs, applesauce and water, and mix thoroughly. Cook and stir until the breadcrumbs have absorbed all of the liquid. Season the stuffing mixture with salt, cinnamon, nutmeg, cloves and ginger.
- Unroll the pork roast and place in a baking dish, fatty side up. Season with salt and pepper to taste. Spoon the stuffing mixture over the roast. If you have any leftover stuffing, arrange it around the roast.
- Roll the roast up and tie with kitchen twine. Bake for 45 to 50 minutes in the preheated oven.
- Insert an instant read cooking thermometer into the roast, and make sure it registers to 145°F before serving.
