Child Friendly 'Ice Cream' Bars
Is there any child on the planet that doesn’t adore ice cream? However, if you are parent, I bet you’ve worried about the health issues of giving your child too much of the sweet, creamy stuff.
Get your kids to help you make this ingenious, healthy ‘ice cream’ where we use banana as a substitute.
I promise you, the kids will find these just as delicious as standard ice cream bars, and you won’t have to worry about them eating unhealthy snacks!

Your ingredients:
- 3/4 cup of semisweet or bittersweet chocolate chips
- 4 large ripe bananas
- 1/4 cup of shredded coconut
- 12 popsicle sticks

Directions:
How to make your ‘Ice Cream’ Bars:
- Melt your chocolate chips by placing into a bowl and microwaving for 1 minute. Stir the chips, and then keep microwaving in 20 second intervals, stirring each time, until fully melted.
- Peel your bananas, and using a sharp chef’s knife and wooden cutting board, cut each banana into thirds (crosswise)
- Place the shredded coconut into a shallow dish.
- Place the ingredients side by side; first the banana pieces, then the melted chocolate, and finally the shredded coconut.
- Get your kids involved! Get them to insert a popsicle stick into each banana piece. Then, get them to roll each banana piece in the melted chocolate, and then sprinkle shredded coconut on top (if the chocolate starts to become solid, reheat in microwave for another 20 seconds).
- Place the bananas into a baking sheet and freeze for 2 hours until frozen. Enjoy!
