Child Friendly Healthy ‘KFC’ Burgers
Their motto is ‘finger lickin’ good’…and they certainly are! KFC have been making most of us, including kids, salivate over their chicken for a number of decades. What they haven’t been so good at is making sure what we eat is healthy.
The odd visit to KFC isn’t going to harm us, or our children. But when they’re begging to go just one time too many, get them to help you make this ‘baked’ version of the famous KFC burger. They’ll just love creating their own ‘secret recipe’…..and you’ll love the fact that this is so much better for them!

Your ingredients:
- 1 cup of iceberg lettuce
- 2 small tomatoes
- 4 bread rolls
- 2 large chicken breast fillets
- 1/2 cup of plain flour
- 2 eggs
- ‘Secret recipe mix’ – own mix of herbs and spices (great ones to choose are parmesan cheese, lemon rind, parsley, sage, oregano, cumin, chili powder or paprika)
- 1 cup of cornflake crumbs
- 3 rashers of lean bacon
- 4 tablespoons mayonnaise
- 4 slices of cheddar cheese

How to make your Healthy ‘KFC’ Burger:
- Line a baking tray with a BBQ grill mat. Set aside
- Shred your lettuce using a sharp chef’s knife and wooden cutting board. Slice your tomatoes using a serrated bread knife. Then, using the same knife, split your bread rolls. Set aside
- Slice the chicken breasts in half lengthwise, using your chef’s knife, and then cut each half in two.
- Place the flour in a large, shallow dish. Break the eggs into a separate bowl and whisk lightly using a small balloon whisk.
- Get your kids involved. Get them to come up with their own secret ‘KFC’ recipe by giving them some herbs and spices to mix up as they wish. Some great choices are parmesan cheese, lemon rind, parsley, sage, oregano, cumin, chili powder or paprika).
- In a separate shallow dish, place the cornflake crumbs, and add the secret ‘KFC’ mixture. Mix well.
- Place the ingredients into one line; first the dish full of flour, second the bowl of whisked eggs, and lastly the bowl of cornflake crumbs.
- Get your children to assemble the chicken pieces. Get them to coat each chicken piece with four, dust off the excess, dip into egg, wait for excess to drip off, and then coat in cornflakes crumbs.
- Once all the chicken pieces have been coated, place onto the lined baking tray and refrigerate for 30 minutes.
- Preheat your oven to 350°F.
- Take the coated chicken out of the fridge and place into the oven. Bake for 20 minutes.
- In the meantime, heat a skillet over a medium heat, and then add the bacon. Cook for about 5 minutes, until the bacon is brown and crispy. Set aside with your salad and rolls.
- Take the chicken out of the oven. Insert a cooking thermometer into the middle of each chicken and make sure it registers to 180°F (the safe temperature for cooked chicken).
- Get your kids to build their ‘KFC’ burgers! Spread each roll with the mayonnaise, top with the lettuce, tomatoes, cheese and cooked bacon, place a chicken piece on top, and then add the roll top. Devour!
