Child Friendly Healthy Chocolate Muffins
Bakery aisles in a supermarket really are tempting to all of us, never mind kids. All that sugary, gooey, spongy loveliness…….but we all know it’s a terrible food choice.
Get your kids to help you make our healthy chocolate muffins – just as rich and delicious as what you would find in the bakery aisle, but without all the bad stuff!

Your ingredients:
- 1 carrot
- 1 zucchini
- 1 cup of sugar
- 275 g of butter
- 2 eggs
- 1/2 cup of natural yoghurt
- 1/2 cup of raw cacao powder
- 2 cups of plain flour
- 1/4 teaspoonof bicarbonate of soda
- 1 teaspoonof baking powder
- 1/2 teaspoonof sea salt
- Up to 1/2 cup of milk (only if needed)

Directions:
How to make your Healthy Chocolate Muffins:
- Preheat your oven to 310°F. Add paper cases to two 12-hole muffin trays.
- Using the coarse grate of a box grater, grate the carrot and zucchini, and then squeeze out moisture.
- Place the sugar and butter (make sure the butter is at room temperature) into a large bowl and beat using a large balloon whisk until creamy and light. Add the eggs, one at a time, beating well throughout.
- One the eggs are fully combined, stir in the yoghurt. Set aside.
- In a different bowl, combine the cacao powder, flour, bicarbonate of soda, baking powder and salt using a small balloon whisk.
- Pour the dry powder mixture into the wet mixture and fold ingredients together using a ‘spoonula’ spatula until combined.
- Fold in the grated carrot and zucchini. If the mixture appears a little dry, gradually addin up to 1/2 cup of milk.
- This is a great time to get your kids involved. Give them a spoonula spatula, and get them to spoon the mixture into the paper cases in your two muffin tins. Make sure each case is about 3/4 full (don’t overfill each case).
- Place in the oven for 20-25 minutes, until a toothpick comes out clean when pierced into a muffin.
- Allow the muffins to cool for 10 minutes, and then turn out onto a wire rack.
